  • 1 Ib ground beef
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 cup frozen peas and carrots
  • 2 cups shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tablespoons Worcestershire sauce
  • 1 tbsp tomato paste
  • Fresh parsley or green onions for garnish

  • Preheat Oven: If you prefer a baked finish, preheat your oven to 375°F (190°C).
  • Cook Ground Beef: In a large skillet over medium heat, brown the ground beef until fully cooked (about 5-7 minutes). Break it apart as it cooks. Drain excess grease, if necessary.
  • Sauté Aromatics: Add the diced onion and minced garlic to the cooked beef. Cook for another 2-3 minutes until the onion is translucent.
  • Flavor and Season: Stir in salt, pepper, paprika, Worcestershire sauce, and tomato paste. Mix well to coat the beef mixture.
  • Add Rice and Liquid: Add the uncooked rice and beef broth to the skillet. Stir to combine. Bring to a simmer, cover, and cook on low heat for 15-18 minutes or until the rice is tender and liquid is absorbed. If using pre-cooked rice, simply stir it in and warm through for 3-5 minutes.
  • Incorporate Veggies and Tomatoes: Add the drained tomatoes and frozen vegetables to the skillet. Stir to distribute evenly.
  • Cheese It Up: Mix in 1 cup of shredded cheese until melted.
  • Baking Option: If baking, transfer the mixture to a casserole dish and top with the remaining cheese. Bake uncovered for 10-15 minutes until bubbly and golden.
  • Garnish and Serve: Sprinkle with parsley or green onions for freshness.
