- 2 Ib potatoes
- 1 cup sour cream
- 1 can cream of mushroom soup
- 2 cup shredded cheddar cheese divided
- 6 slices bacon cooked and crumbled
- 1/2 cup butter melted
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt & pepper to taste
- 1/2 cup green onions chopped
Preheat Oven: Set your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Prepare Potatoes: Wash, peel (if desired), and dice the potatoes into small cubes.
Mix Ingredients: In a large bowl, combine the sour cream, cream of mushroom soup, melted butter, garlic powder, onion powder, paprika, salt, and pepper. Stir in 1 ½ cups of the shredded cheddar cheese and half of the crumbled bacon.
Assemble: Add the diced potatoes to the mixture and stir to coat evenly. Pour into the prepared baking dish and spread evenly.
Bake: Cover with foil and bake for 40 minutes. Remove foil, sprinkle the remaining cheese and bacon on top, and bake uncovered for an additional 15-20 minutes, or until potatoes are tender and cheese is bubbly.
Garnish & Serve: Sprinkle with chopped green onions and serve warm!
